Rubinstein was born in South America where her father, pianist Arthur Rubinstein, was performing on tour. The family lived in France until emigrating during World War II. As a young girl, Rubinstein intended to be a dancer or actress, but turned to photography in 1967. She studied under influential photographers Lisette Model and Diane Arbus.
